Pineapple Topping
4 c. diced pineapple
1 c. sugar
Bring pineapple and sugar to a boil over med hi heat. Turn the heat down to med,cook until thickened. It will take close to an hour. Don't let it scare you as the pineapple cooks it will exude lots of juice. Yield:2 cups
*When you buy pineapple at store ,it is almost never ripe enough to eat on the same day.I usually let the pineapple ripened for a few more days. For this recipe, I let it sit for a week.
