Caramelized pineapple
8 c. pineapple chunks
2 c. sugar
1/4 c. rum
1 tsp cinnamon
pinch of salt
Mix all ingredients together in a saucepan. Bring it to a boil and simmer for 30 min or until sauce is thick and pineapple is translucent.
Use this as filling for napoleons, crepes or simply eaten with vanilla ice cream.
